The Richest Chocolate Cake Recipe (I know of)

Ingredients:

• 3 ounces unsweetened chocolate (coarsely chopped)
• 1/3 cup water
• 2 large eggs
• 1 stick (8 tablespoons) unsalted butter (softened)
• 1-1/2 cups dark brown sugar
• 2 cups all purpose flour
• 1-1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 3/4 cup sour cream

Preheat oven to 350 degrees. Prepare two 9 inch round cake pans (1 1/2 inches deep). Line the bottoms with parchment or wax paper.

In a heatproof bowl, combine water and chocolate. Place over a pan of hot water. Stir until the chocolate is melted. Set aside until the chocolate is slightly cooled. Then whisk in the eggs. Cool for 5 minutes, then invert the pans and peel off the paper. Allow the cake to cool completely before frosting.

In a large heatproof bowl, combine egg whites, sugar and salt. Place the bowl over a pan of simmering water and stir constantly for about 4 minutes until egg white mixture reaches 150 degrees with a candy thermometer. Remove bowl from water.

Use an electric mixer to beat the egg white mixture until it's thick and cooled (about 5 minutes). Add the butter, little by little, until all ingredients are smooth and spreadable. Finally, beat in the chocolate mixture, a little at a time, until it's well incorporated.

Scoop the mixture into the prepared pans and bake for 50 minutes or until a cake tester can be inserted and cleanly removed.
