Traditional Cheese Fondue
- 1 1/2 pounds Emmentaler (type of Swiss Cheese), shredded
- 4 tablespoons flour
- 3 cups dry white wine
- 2 garlic cloves, peeled and diced
- 1/2 teaspoons salt
- Pinch of white pepper (or nutmeg)
- 2 tablespoons of Kirsch, (or substitute brandy, cognac)
- Bite-size pieces of bread
Dredge shredded cheese in the flour. Warm wine over low heat; don't
allow it to boil. When a few
bubbles begin to rise to the surface, add the cheese a little at a
time. Stir constantly. Melt each batch
of cheese before adding more.
Rub the inside of a 2-quart round earthenware fondue pot with
garlic. Add seasoning and Kirsch to the
cheese mixture and mix well.
Pour into prepared pot and keep warm.
