Coconut Macaroon RecipeThis coconut macaroon recipe was submitted by Katherine Heer of Sacramento, California.Make your ordinary coconut macaroon recipe special: make holiday dyed macaroons. One of the biggest things people always ask me to make is coconut macaroon kiss cookies, which I don't mind, but it gets boring after awhile.
So I opted to change things slightly to make things a little more festive. Here is the recipe:
Combine flour, baking powder and salt; gradually add to creamed mixture until well blended. Stir in 3 cups coconut. Cover dough and chill about one hour. Shape dough into 1 inch balls. Roll balls in remaining coconut and place on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes or until lightly browned. Remove from oven and press a kiss into center of each cookie. Allow to cool one minute. Carefully remove cookies and allow to cool until kiss is firm. So what I would do is, when you roll the balls in the last of the coconut, take some food coloring, and with a brush, paint the outside of the coconut to match for the holidays. IE; Christmas=red and green, Valentines=red. This way it is festive yet still yummy.
