Flan Recipe Spanish Style

This basic flan recipe Spanish style is a traditional Mexican delight. It's certainly one of the most famous Mexican desserts ever and a great choice for a traditional Mexican dinner menu or a Cinco de Mayo theme party.

As authentic as it gets, this recipe features a caramelized sugar coating that gives it the Spanish flan trademark. Equally delightful, flan recipes that include fruit, nuts, and even pastry crust owe their origins to the English tradition.

Flan Recipe - Spanish Style!

• 3/4 cup sugar (for the caramel)
• 1 quart milk (or 4 cups)
• 1 cup sugar (for the custard)
• 1 teaspoon real vanilla
• 4 egg yolks
• 6 additional eggs (lightly beaten)

In a small saucepan, over medium low heat, heat the first portion of sugar (3/4 cup) until it starts to caramelize, stirring constantly.

Pour the caramelized sugar into earthenware molds, and turn the molds so that the sugar coats the entire bottom and sides.

In another saucepan, heat the milk and one cup of sugar for approximately 10 minutes. Remove from heat and allow to cool slightly. Stir in vanilla. Then add the egg yolks and the beaten eggs.

Mix thoroughly and pour the mixture into the caramel coated molds.

Place the molds in a larger pan that is filled with hot water. The water should come up half way to the top of the molds.

Place the pan in a 350 degree oven and bake for about 1 and 1/2 hours or until a toothpick can be inserted into the flan and removed clean.

Allow to cool completely before inverting the molds.
