Eye Balls In Blood Sauce

Eyeballs are really simple to create out of eggs. Get the smallest eggs you can find or purchase quail eggs from an ethnic food store.

Boil the eggs until firm. Rinse and peel. For the iris of the eye, slice an olive. Use a little ketchup to affix the olive to the eye ball.

to make the sauce, mix one cup organic ketchup (or high quality ketchup) with 2 tablespoon of horseradish sauce. Add a dash of Tabasco if desired.

Spread the sauce in a shallow bowl or a plate and place the eyeballs in the bowl. Egg eyeballs can be used to add a haunting effect to many Halloween dinner recipes.

Creepy Green Thing

Halloween Dinner Recipes

The "creepy green thing" can be served on top of any of your Halloween dinner recipes whether it's fatal fish cakes or steak and potatoes. It's a great compliment to meat and potatoes. Select an Anaheim pepper (a mildly hot, sweet pepper). You could use any type of pepper you like, as long as it's not too hot.

Ingredients:

  • 4 small Anaheim peppers (or sweet peppers)
  • 3 tablespoons of butter
  • 1 1/2 cups corn or Quinoa
  • 1 medium onion, chopped
  • 1/4 cup sour cream or plain Greek yogurt
  • 3/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 cup grated cheese
  • 24 small snow peas or asparagus tips (for the legs)
  • 8 small caper berries (for the eyes)
  • pimento garnish for tongue

Preheat the oven to 350 degrees.

Wash pepper and slice length wise, leaving the stem as a "tail". Remove the seeds and veins.

Bring a pot of salted water to a boil and boil the pepper until they are tender. Remove, set aside and allow to cool enough to handle.

Meanwhile, prepare the legs. You can use fresh snow peas (as shown here) or even asparagus tips.

Steam the snow peas just slightly so that they retain firmness and flavor and set aside.

In a skillet heat the butter and saute the onion until tender. Add the corn and sour cream and simmer for about a minute. Season with salt, and paprika.

Stuff each pepper with the mixture and 1/4 or the grated cheese inside each pepper. Place in a greased baking dish and bake for about 10 minutes.

Arrange the "creepy green thing" on the serving plate. Make two small slits near the nose of the pepper and press the capers into the slits to make eyes.

Slip 3 snow peas into side slits of each side pepper. Fashion the snow peas to look like legs. Finally, place a pimento at the nose of the pepper to serve as the tongue.

Serve and enjoy!
