Baked Coconut Shrimp
Ingredients:
- 1/4 cup all-purpose flour
- 2 tablespoons packed brown sugar
- 1/4 teaspoon salt Dash of cayenne pepper
- 1 egg 1 tablespoon lime juice 1 cup shredded coconut
- 40 uncooked peeled deveined medium shrimp (about 1 pound)
- 2 tablespoons butter
- melted Apricot Sauce
Heat oven to 425 degrees. Prepare broiler pan with cooking oil spray. Make Apricot sauce.
Mix flour, brown sugar, salt, and cayenne pepper in a shallow bowl. In another shallow bowl, beat egg and lime juice. Place shredded coconut on a plate. Dip shrimp in flour mixture to coat, then in the egg mixture, and finally coat with coconut.
Place shrimp on broil pan, drizzle with butter, and transfer to oven. Bake approximately 7 or 8 minutes until shrimp are pink and the coating is slightly brown. Serve with apricot sauce.
Apricot Sauce
Ingredients:
- Apricot preserves
- 1 tablespoon of lime juice,
- 1 tablespoon of apple cider vinegar
- 1/2 teaspoon of ground mustard
Mix all ingredients in a small saucepan and heat until the preserves are melted.
