Party Food in 15 Minutes!
Quesadillas
Ingredients:
- 2 cups shredded Colby or Cheddar cheese (8 ounces)
- 6 flour tortillas
- 1 small tomato, chopped
- 1 small red onion, chopped
- 2 tablespoons canned chopped green chilies
- 4 tablespoons of fresh cilantro, chopped
- Guacamole dip, if desired
Sprinkle cheese evenly over 3 tortillas. Top with the remaining ingredients and place 3 additional
tortillas over the filling.
Place quesadillas on ungreased cookie sheet and bake for about 5 minutes in 350 degree oven. Serve
with guacamole dip if desired.
Pinwheel Rolls
Ingredients:
- 4 soft tortillas
- 1 package (8 ounces) cream cheese
- 1 package (8 ounces) smoked salmon, deli meat may be substituted
- 1 head of green leaf lettuce, wash and separated
- 4 green onions, finely chopped
- Salt and pepper to taste
Lay out tortillas and speed cream cheese on each one.
Divide salmon or deli meat into 4 parts and distribute evenly over cream cheese. Sprinkle with green
onions, and place dry lettuce leaves over the top.
Roll the tortilla onto itself creating a multi-layered pinwheel. Cut off ends and discard. Cut into four or
five equal parts depending on the thickness you desire. You can secure each pinwheel with a decorative
toothpick if you like.
Pig Skins in a Blanket
Ingredients:
- 3 cans of biscuits (24 biscuits) or ready to bake croissants
- 1 package of hotdogs (8 hot dogs)
- Spicy mustard for serving
Cut hot dogs into thirds, making 24 pieces. Remove biscuits or croissants from cans and place hot dog in
the center.
Fold biscuit around hot dog and bake according to directions on the biscuit can (approximately 10
minutes in a 375 degree oven). Serve with spicy mustard.
Deviled Eggs
Ingredients:
- 1 dozen eggs
- 1/2 cup real mayonnaise
- 1/2 cup pickles, finely chopped
- 1/4 cup red onions, finely chopped
- Salt and pepper to taste
- Paprika, a dash on each egg
Hard boil the eggs and cool them by running them under cold water. Shell the eggs and cut in half.
Remove yolks and place in a bowl. Salt and pepper the egg whites and set aside.
Add mayonnaise, pickles, and onions to the yolks and combine thoroughly. Put a little of the mixture
into the hollowed out part of each egg white. Finish by sprinkling a dash of paprika on each egg for
garnish.
