Easy Peanut Brittle Recipe
This is really an easy peanut brittle recipe. It makes great gifts for Christmas,
treats for a homemade Easter basket, or for gifts for anyone with a sweet tooth!
Ingredients:
- 2 cups granulated sugar
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 2 cups shelled nuts, such as walnuts, hazelnuts, or peanuts
- 1 cup shredded coconut, lightly toasted
Lightly butter a cookie sheet and set aside.
Melt the sugar in a heavy saucepan over medium heat (about 15 minutes). Stir in
the butter and lower the temperature. Cook until the color becomes amber.
Remove from heat immediately and stir in vanilla, nuts and coconut.
Pour mixture into the cookie sheet and spread to 1/3 inch thick using a back of a
wooden spoon.
After the brittle has completely cooled, loosen it from the sheet and break it into
pieces.
What's even better is that it can be stored for a month, so make a double batch of
this peanut brittle recipe!
