Pears Poached in Red Wine
Ingredients:
- 2 cups dry red wine
- 2 tablespoons lemon juice
- 1 cup sugar
- 1 cinnamon stick
- 3 large ripe but firm pears, peeled and halved
In a saucepan, bring wine, lemon juice, and sugar to a boil over medium heat. Stir until sugar has dissolved. Add pear halves, and partially cover the pan. Reduce heat to a simmer and cook pear 15 to 20 minutes, or until a knife easily pierces the pear.
To serve hot, discard the cinnamon stick and serve pears in a dessert dish with the juice. A little whipped cream may be added.
Red wine poached pears can also be served cold in the same manner.
