Cheesy Potato Skins

Ingredients: Bake potatoes in a 375 degree oven for an hour, or until done. Let stand until cool enough to handle. Cut potatoes into fourths lengthwise. Scoop out potato, leaving 1/4 shells, reserve potato pulp.

Set oven to broil and place potato skins skin side up. Brush with butter and broil briefly (3 to 4 minutes) until skins are slightly crisp. Remove and turn skins over.

Place 1 table spoon mashed potato in skins, sprinkle with cheese, and bacon pieces and broil for about 30 seconds until cheese is melted. Serve with sour cream that is garnished with chopped green onion.
