Vegetarian Taco Recipe
Ingredients:
- 1 package of Morningstar Veggie Crumbles
- 3 tablespoons of butter
- 1 small onion (finely chopped)
- 1 clove of garlic (finely minced)
- 1 can of black beans, drained
- 1 red bell pepper (finely chopped)
- 1 tomato (finely chopped)
- 1 package of taco seasoning mix or use the taco seasoning recipe
In a skillet, melt the butter over medium heat. Saute all of the
vegetables in one tablespoon of butter. Remove the vegetables from the
skillet and set aside for a moment. Put the remaining butter in the
same skillet and brown the veggie crumbles.
Return the vegetable to
the veggie crumbles and add the drained black beans and spice
mixture. Heat until the beans are warm.
Serve the mixture in either soft of hard taco shells with toppings
such as guacamole, pico de gallo, salsa, tomatoes, black olives,
onions, sour cream, cheese and lettuce.
