Tomato Cucumber Salad

Ingredients:

• 2 cups cucumbers, peeled and sliced
• 1/4 cup red onion, diced
• 1 cup cherry tomatoes, cut in half
• 1/4 cup Parmesan Cheese, fresh and cut into slivers
• Busy Day Vinaigrette Dressing

• 1/4 cup olive oil
• 1 tablespoon sugar
• 2 tablespoons apple cider vinegar
• 1/4 teaspoon salt

First create the busy day vinaigrette dressing by combining all the olive oil, sugar, vinegar and salt in a bowl and mixing thoroughly.

Place the cucumbers, onions, tomatoes and slivers of fresh Parmesan cheese into a large bowl and pour the vinaigrette over the top. Toss the cucumber salad and coat well.

Allow the salad to marinate in the refrigerator for at least 30 minutes and toss the cucumbers once again while it's marinating to ensure that the dressing marinates all the cucumbers equally.
