Rueben Sandwich Recipe

This rueben sandwich recipe makes any lunch a treat. It's a favorite sandwich in my house right up there with the gourmet grilled best chicken salad sandwich!

Of course, you can substitute store bought Russian dressing for the recipe below. But, this "mock" russian dressing is extremily easy and can be made from ingredients that are usually on hand in the kitchen.

Reuben Sandwich Recipe

• 1 cup prepared sauerkraut, from the refrigerator section of the grocery store
• 3/4 pound corned beef
• 4 slices of Swiss cheese
• 8 slices of rye bread
• Easy Mock Russian dressing

Distribute all the ingredients equally among four slices of rye bread and top the sandwiches with the remaining slices of rye bread.

Mock Russian Dressing:

• 1/4 cup real mayonnaise
• 2 tablespoons of ketchup
• 2 tablespoons of minced onion
• salt and pepper to taste
