Soak wooden skewers in water so that they don't burn on the grill. Marinade the beef or chicken cubes for at least 30 minutes. Cut the vegetables into cubes. Divide the ingredients equally among the skewers. Place the meat and vegetables alternately on the skewers. Grill over indirect heat, turning occasionally until the kebobs are cooked through.
