Superbowl Party Food for a Pot Luck

Scalloped Potatoes

• 4 large baking potatoes, washed and thinly sliced (a mandolin slicer may be used)
• 1 cup diced onions
• 1/2 to 3/4 pound of ham, chopped
• 2 cups of shredded cheddar cheese
• 4 tablespoons of flour
• 3 tablespoons or herbs of Provence or any mixed herb seasoning1 cup of milk
• Salt and pepper

Heat oven to 375 degree. In a 9 x 13 greased casserole dish spread one layer of potatoes (about 1/4 of the diced potatoes). Sprinkle with a dash of salt, pepper, and mixed herbs.

Layer about 1/4 of the onions and 1/4 of the ham on top. Sprinkle 1 tablespoon of flour over the onions and ham and finish this layer with 1/2 cup of cheese.

Repeat the layering process until all ingredients are used. Cover dish with foil and bake for approximately one hour or until a toothpick can easily penetrate all layers.

Remove foil and bake for an additional 10 minutes until the top layer of cheese with slightly browned and bubbly.

Chili-Chicken Casserole

Ingredients:

• 1/4 lb. sliced fresh mushrooms
• 1/4 cup onion, finely chopped
• 1/2 cup parmesan cheese
• 2 tablespoon butter
• 3 cups of cut-up cooked chicken, either grilled or baked
• 3 cups soft bread crumbs
• 1 cup milk
• 1 cup chicken broth
• 2 eggs, beaten
• 2 tablespoon 21 herb salute or any mixed herb seasoning
• Salt and pepper to taste

Heat oven to 350 degrees. Saute mushrooms in butter then mix with the rest of the ingredients. Spoon into a greased 9 x 13 baking dish and bake for approximate 1 hour until casserole has set up. Bake longer if needed to firm casserole a bit. Sprinkle top with cheese and set under broiler until top is just brown and bubbly.

Fiesta Tamale Pie

Ingredients:

• 1 small onion, finely chopped
• 1 clove garlic, finely chopped
• 1 tablespoon butter or cooking oil
• 1 pound of ground beef
• 1 can (16 ounces) tomatoes
• 1 can (16 ounces) whole kernel corn, drained
• 1 can (8 ounces) mild green chilies
• 1 to 2 teaspoons of salt
• I package of taco seasoning mix
• 18 pitted black olives
• 1 cup corn meal
• 1 cup milk
• 2 eggs, beaten
• 1 cup grated cheddar cheese

Heat oven to 350 degrees. Saute onions and garlic in butter until translucent. Add beef and cook until browned, mix in taco seasoning. Drain fat, then add tomatoes, corn, and chilies. Mix well and spread into a 9 x 9 casserole dish. Press olives into mixture.

In a bowl combine corn meal, milk and eggs. Mix well and spoon over meat and vegetables. Sprinkle with cheese and bake for about 45 minutes or until a tester can be inserted and removed cleanly from the cornbread topping.
