Tomato Cucumber Salad

Tomato Cucumber Salad makes the perfect cold picnic food dish. Pair it with picnic sandwiches or items from our perfect picnic menu and your lunch you're ready for the taste of summer.

Recipe for Tomato Cucumber Salad

• 2 cups cucumbers, peeled and sliced
• 1/4 cup red onion, diced
• 1 cup cherry tomatoes, cut in half
• 1/4 cup Parmesan Cheese, fresh and cut into slivers
• Busy Day Vinaigrette Dressing

Busy Day Vinaigrette Dressing

• 1/4 cup olive oil
• 1 tablespoon sugar
• 2 tablespoons apple cider vinegar
• 1/4 teaspoon salt

Place the cucumbers, onions, tomatoes and slivers of fresh Parmesan cheese into a large bowl and pour the vinaigrette over the top. Toss the cucumber salad and coat well.

Allow the salad to marinate in the refrigerator for at least 30 minutes. Toss the cucumbers once again while it's marinating, to ensure that the dressing marinates all the cucumbers equally.
